- 1/4 cup tomato, diced
- 1/4 cup spinach, chopped
- 1 egg, whisked
- 1 tablespoon shredded cheddar cheese
- 1/4 cup low-fat cottage cheese
- 1 teaspoon Parmesan cheese, grated
Heat skillet over medium heat. Cook the tomatoes and spinach together until spinach is wilted. Remove from heat and set aside. Pour the egg evenly over the bottom, shaking the pan periodically. As the top begins to become firm, place cheese in the center and allow to melt. Add the vegetables and fold the egg over to form the omelet. Remove from the skillet and enjoy.
