Senior Nutrition: Start the Morning Off Right

By , 8:00 am on

We’ve all heard the saying that breakfast is the most important meal of the day. For seniors, starting each morning with a healthy, well balanced breakfast not only helps to regulate weight and encourage healthy habits, studies show that seniors who regularly enjoy breakfast have enhanced mood, alertness, and concentration.

At Home Care Assistance of Palm Beach, FL, we believe that a balanced diet is important for all of our senior clients and wanted to share one of our favorite breakfast recipes for a healthy and hearty spinach Florentine omelet.

Ingredients

  • 1/4 cup tomato, diced
  • 1/4 cup spinach, chopped
  • 1 egg, whisked
  • 1 tablespoon shredded cheddar cheese
  • 1/4 cup low-fat cottage cheese
  • 1 teaspoon Parmesan cheese, grated

Preparation

Heat skillet over medium heat. Cook the tomatoes and spinach together until spinach is wilted. Remove from heat and set aside. Pour the egg evenly over the bottom, shaking the pan periodically. As the top begins to become firm, place cheese in the center and allow to melt. Add the vegetables and fold the egg over to form the omelet. Remove from the skillet and enjoy.

Benefits for Seniors

Soft enough if your loved one has difficulty chewing and plenty of moisture to combat dry mouth, this Spinach Florentine Omelette provides a jumpstart to the mornings with many essential vitamins. Eggs are full in protein and are high in B12, which increases energy. Spinach is high in iron, magnesium and potassium, which are great for carrying oxygen to the lungs, fighting chronic fatigue, and keeping blood sugars low.
